A go-to blend of the seasons to top a dish as versatile as they come: a salad! We enjoy this dressing over both raw & cooked veggies, and use it as a marinade and dip. This herb dressing is as seasonal as the fresh veggie salad they accompany. Some of our favorite herb blends are chives, parsley & dill and basil & oregano. Use what sounds good & what's in season! It's easy & quick to prep.

Yield: 1 pint of dressing

Ingredients:

  • ¼ cup apple cider vinegar
  • ¼ cup honey
  • 1 t mustard powder
  • 1 cup fresh seasonal herbs
  • 2-3 garlic cloves, and try green garlic in the spring for a sweet & mild garlic flavor!
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup olive oil
  • ½ cup water

Directions:

Measure & add all ingredients for the dressing into a blender.
Notes: 

Green Garlic is spring-harvested garlic that hasn't quite matured yet. Its flavor is deliciously mild and lets us taste that homegrown garlicky goodness a little early! We harvest our main garlic crop around the 4th of July and enjoy Green Garlic April through June. Enjoy experimenting with the bounty of locally-grown herbs & produce available!
