Lavender Peach Cobbler

Ingredients:
- 1 cup granulated sugar, divided
- ¼ cup water
- ½ teaspoon dried lavender buds (add more if you prefer a stronger lavender flavor; grind for a smoother texture if desired)
- 4-6 large peaches, peeled and sliced (about 4 cups)
- ¼ cup butter
- 1 cup self-rising flour
- 1 cup milk
- 1 teaspoon vanilla extract
- ¼ teaspoon ground cinnamon
Directions:
- Preheat oven to 350 degrees F.
- Combine ¼ cup sugar, water and lavender in a medium saucepan. Bring to a simmer over medium-high heat. Stir until sugar dissolves. Add the lavender. Reduce the heat to low and cook for 5 minutes. Add the peach slices and cook for 5 minutes.
- Place the butter in a 9 x 9 baking dish. Put in the oven to melt the butter.
- In a large mixing bowl, add the flour, remaining ¾ cup sugar, milk, vanilla, and cinnamon. Stir until smooth.
- Pour the batter into your baking dish on top of the melted butter.
- Spoon the peach mixture evenly over the batter. Bake for about 50 minutes, or until golden brown.
- Serve while warm with a scoop of vanilla ice cream or sprinkled with cinnamon sugar.
