Sarah Martin became interested in microgreens after trying to find relief from symptoms when she was diagnosed with fibromyalgia and chronic fatigue. She had always enjoyed helping out on the family produce farm as a child and had a big backyard garden. After many different supplements she knew she needed to turn to real food. But what superfood can be grown reliably in Nebraska?! That is when she ran across the data showing the nutrient content of microgreens and decided to give it a try! So microgreens are just vegetable greens harvested when the plant is very young about 1-3 inches tall, after the cotyledons form (the first leaves of the plant).
